Ah, you had the all time favorite snack of the Dutch, patat frites – am smiling and my mouth is watering:) Also, one of the last times I was visiting your blog, I saw Zadkine’s statue of “the city without a heart.” Always loved that expressive one.
Last time we were there, we were looking for the statue, and couldn’t find it!

There’s a restaurant called The Publican in downtown Chicago that serves the fries that are done in duck fat. They are absolutely amazing for a once in a while indulgence.

The only debate about Poutine is who invented it. Fries with cheese curds and gravy.

I actually prefer grated old cheddar cheese and a thick mushroom gravy rather than the traditional Quebec version. But I’m a Brit who doesn’t like vinegar and who was having mayonnaise on his chips before it was a “thing”

I was the same regarding gravy on chips but the cheese makes it different from regular chips so the gravy seems fine in those circumstances. I don’t like ketchup on chips which is the popular sauce around here. I think that may be why I like mayonnaise.
