Mmmm, this is a tasty cheese.

It’s a Gouda that has been matured for at least 18 months and is smooth but slightly crumbly. According to the Cheese Society, it goes perfectly with figs and pistachios, and according to the cheese’s own website it is best served with drinks – it all sounds good to me!

You’ll find it in plentiful supply around Amsterdam.  It’s hard to ignore these huge orange cheeses with their shiny black rind on bold display in the streets.  The inventive display below of reflecting cheese slicers really caught my eye.
