Wow! On my last visit to the Camargue I only saw the tame working horses lugging tourists around. I need to go back.

You really need to have someone arrange the horses for you. There are a few guardians who will gallop the horses for you and arrange some play fighting. I recommend arranging through Tim Mannakee: https://www.timmannakee.com/photography-workshops/white-horse-photography-2020/
